This is actually more of a milestone, 1/3 of the way through!
I had my usual kombucha for breakfast along with some scrambled eggs with chicken, peppers, and chives. This is one of those “farmer breakfasts”. We both had big meals before heading out to clean the barn. I didn’t do half the work, but still ended up with a sore back. I’m glad it’s done though.
I prepped curry chicken salad in the afternoon for Geoff’s lunches. I used the shredded chicken that I cooked in the crockpot along with chives, a chopped opal apple, some chopped cashews, a generous amount of curry powder, and some apple cider vinegar. Having a couple of these in the fridge means that Geoff or I have an easy lunch option to grab even when we are running late.
In the early evening Geoff went to the grocery store with me which he rarely does. He was pretty enamored with a large T-bone steak so I decided to go all out. He did most of the cooking though. He seared off the T-bone while I caramelized sliced sweet onion to go on top. Since I wasn’t having the steak he made a pan sauce with a little juice and butter. We both had snow crab with some garlic-ghee to dip in and baked sweet potatoes with ghee and hot sauce. For the sweet potatoes I actually microwave them for 5 minutes under a wet paper towel, turn them, and then microwave them for another 5 minutes. I also chopped up some red kale and served that with my homemade Caesar dressing. Geoff managed to still eat the huge T-bone and the crab, I was pretty surprised.
This work week has been rougher than the first one. I forgot to make my kombucha (I put half a bottle and half sparkling water in to an insulated tumbler with a little ice to drink in the car).
After work we had to head to the flooring shop that was an hour away to pick out new carpet, hardwood finishes, and tiles for the new house. By the time we were done and back home it was after 9pm. I try to go to bed by 11pm, but since I’d hardly eaten I still wanted dinner. Thankfully I had made a list of some quick week night dinners on the fridge. So Geoff did most of the work and made my Chicken Panang Curry with cauliflower. It was hot, spicy, and very comforting. We had some fresh fruit for dessert. I don’t normally do desert or crave sweets that much, but feeling down I kind of wanted something. I probably had more fruit than I should have, but if that’s the worse thing I do it’s probably not too bad.
Tuesdays are my extra early morning. I made my kombucha and packed a lunch, but then my day was booked so I didn’t get a chance to eat lunch. I need to be better about eating when I have time. I am not hungry and by the time I am it’s 1 or 2pm and I’m heading in to meetings.
I needed to run errands after work and Geoff had dinner plans so I picked up ingredients for making a taco bowl. I have to say that my “food privilege” in regards to both money and availability is *really* apparent if I try shopping somewhere like Target or Walmart for groceries. It’s a sad day when that is your only source of fresh food. I was trying not to make an extra stop at the grocery store, but man the selection sucked.
Since I hadn’t eaten I picked up a bag of Bare Snacks Apple Chips while grocery shopping. They are organic dried apples with only cinnamon. I ate the whole bag though :/ They aren’t off the plan, but it’s a lot of carbs. For me it wasn’t the sweet that I was drawn to but the crunchy chip like texture. I’ll binge eat wasabai almonds like nobody’s business as well. It’s the mindless snacking. Thankfully I only got the one bag. It could have been worse.
Overall this week is just feeling a bit low and depressed. In my defense I have *a lot* going on. We hopefully close on the new house in less than two weeks, have a remodel to start, are planning a wedding, and I still work full-time and have school full-time. I’m sure the frequent meal skipping is not helping. I really need to focus on making time for my meals while at work.
